The disreputable member of the wine family — and the one that demands the most attention.
The Story: Black Sheep is our flagship red: an equal blend of Cabernet Sauvignon and Shiraz, but not simply blended and bottled. The best barrels of the vintage are selected for their individual character, brought together in equal measure, and then returned to French oak for another year of maturation.
That extra year allows the two varieties to settle into each other, building layers of dark fruit, spice and savoury complexity while retaining the structure and depth that made the original barrels worthy of selection. It is a wine that rewards a little patience, but is equally compelling now with some time to breathe.
Perfect With: Pair with char-grilled beef or lamb, slow-cooked dishes with rich sauces, a sharp hard cheese or dark chocolate. Best served at 18-20°C, preferably beside a smouldering fire with a suitably quirky companion.
